Sift together and set aside:
1 tsp baking soda
2 c sifted flour
1/2 tsp salt
Cream until shortening is softened:
2/3 c butter or margarine
1 tsp vanilla
Add gradually, creaming after each addition: 3/4 c sugar (for chewy cookies add 1 1/2). Add in halves, beating thoroughly: 1 egg.
Gradually stir in dry ingredients and blend well. Nuts, raisins, and chocolate chips are optional. Chill thoroughly in refrigerator. Lightly grease cookie sheet. Cut dough with floured cookie cutter. Bakeat 375 degrees for 10-12 minutes. Remove immediately to rack to cool. Makes 1 1/2 dozen large cookies.
