Grilled fish steak recipe
Cooking Time : 15 mins.
Preparation time : 15 mins.
Main cooking utensils : frying pan, grill pan
For 4 people you need :
4 fish steaks (preferably from tail)
3 - 4 oz butter
seasoning
1 oz grated parmesan cheese
4 oz blanched almonds
4 oz small button mushrooms
To garnish:
2 - 3 small tomatoes
sprigs of parsley
1 Melt the butter in a frying pan.
2 Brush the fish steaks on one side with a little butter and season lightly.
3 Put on the grid of the grill pan and cook until golden brown, then turn.
4 Season the second side, brush with butter and sprinkle with the cheese.
5 Continue cooking until golden brown and tender.
6 Meanwhile fry the almonds and mushrooms in the remaining butter.
7 Place the fish in the hot serving dish, then add the nuts and mushrooms.
8 Garnish with tomato roses and sprigs of parsley.
To Garnish : To make roses of tomato get a fresh firm tomato. Clean then hold in the palm of your hand. Get a sharp knife and starting at the top of the tomato start to peal away the skin. Try to get the whole tomato skinned in the one go. (This may take practice) Once you have skinned the tomato, get the skin and wind the skin into a tomato rose.
To Serve : Hot with a green vegetable and new or creamed potatoes.
To Vary : Instead of grilling fish fry this in a pan before adding the nuts and mushrooms.
To Store : This dish is not suitable for keeping.
